This famous pumpkin scone recipe by my friends mum is one I had to make. And the results… YUM! The scones taste amazing freshly baked, warm, soft and spread with lashings of butter.
The only dilemma with a pumpkin scone though is whether it’s sweet or savoury. Do you add just butter? or jam? even cream? Either way it’s served, they still taste great!
PUMPKIN SCONES RECIPE
1 Tablespoon Butter
1/2 Cup Castor Sugar
1/4 Teaspoon Salt
1 Cup Mashed Pumpkin (Cold)
2 Cups Self Raising Flour
Beat butter, sugar & salt with mixer
Add egg and then pumpkin
Stir in Flour
Bake 225-250 C for 15-20 minutes. Enjoy!
