Don’t these eclairs look so pretty in pink!?
I have been experimenting with different pastry techniques and decided to make some choux (pronounced like ‘shoe’) pastry. This pastry can be difficult to get right at first, but once you know the technique it’s really quite simple and versatile.
I made up my own filling of vanilla cream and fresh strawberries but any flavour works well. For the top, I melted pink vanilla chocolate (purchased at cake deco/supplier stores) and spread it all over… delicious!
So don’t be intimidated by the choux… enjoy and indulge in these gorgeous little eclairs made even prettier in pink.
