spring at last.

LEMON & HONEY BAKED RICOTTA.

Step out of hibernation. Turn off the heater. Put down the mug of soup. Remove the scarf, beanie and gloves.

The sun is shining, the trees are blossoming and the warm long days are nearing. It’s springtime!

Start your day or end your night with a light but delicious dessert of lemon and honey baked ricotta. The ricotta is not overly sweet, just a good balance to enjoy with fresh berries, oranges or any spring fruit. For texture I added some candied nuts complementing the creamy ricotta.
