Looking through the fridge I came across some fresh passionfruits – which are a very rare thing! And some cream cheese. So I used my trusty source (google) to find a recipe and ta-dah… passionfruit cheesecake slice!

It’s the perfect combo of a cheesecake and slice all in one. The bottom layer is a dense coconut flavour cake. Then baked on top is a creamy, sweet and tangy passionfruit layer. It’s super easy and takes half the time of making a normal cheesecake.

Sprinkle with toasted coconut and serve with ice-cream. Or just enjoy as is… simple and delicious.
