CHOCOLATE CHUNK AND BLUEBERRY COOKIES.

To get over the mid-week hump I’m sharing a cookie recipe that is easy, quick and will get you by till the weekend! These cookies are great as they can use up any random bits and pieces in your pantry. The recipe calls for raspberries, but I used blueberries and also added in some white chocolate.

They aren’t like normal cookies, instead they are light, crumbly and chunky, more like a cake texture. Delicious and full of flavour you can eat them warm or enjoy them served with a nice cold glass of milk!

Chocolate Chunk & Raspberry (or Blueberry) Cookies
Ingredients 
125 g butter, softened
3/4 cup brown sugar
1 egg
1 tsp vanilla extract
1 cup plain flour
1/4 cup SR flour
1/3 cup cocoa powder
1/2 tsp bicarb soda
90g dark choc cut into chunks
125g raspberries
Method
Preheat oven to 180c, line baking tray with baking paper.
Cream butter, sugar and vanilla until light and fluffy.
Add egg and beat until combined.
Stir in sifted dry ingredients, then add chocolate and raspberries.
Drop tbsp of the mixture onto a tray with room for the cookies to spread.
Bake for 12-15 mins then let cool for 5 mins on tray.
