tough cookie.

To get over the mid-week hump I’m sharing a cookie recipe that is easy, quick and will get you by till the weekend! These cookies are great as they can use up any random bits and pieces in your pantry. The recipe calls for raspberries, but I used blueberries and also added in some white chocolate.

They aren’t like normal cookies, instead they are light, crumbly and chunky, more like a cake texture. Delicious and full of flavour you can eat them warm or enjoy them served with a nice cold glass of milk!

So toughen up, bake a batch of cookies and soon your day will look brighter! Now that’s a guarantee. And click here if you want some more ideas on how to have a better day!
